We don’t pile heaps of food on your plate and tell you that being “full” is the same as being “satisfied.” Rather, we offer quality meals that are the right portion at the right price. No gimmicks. Just satisfaction.

Zamba Chicken is Real Food Served Fast

Zamba Chicken is the perfect place for lunch and dinner, as well as a “to-go” treat for families. We are “fast casual,” which means you get a good meal served to you quickly. But don’t mistake us for “fast food.” Zamba Chicken has little in common with burger joints that serve heavily processed food. Rather, Zamba Chicken has designed a menu of meals that people truly want: fresh, expertly-prepared cuisine that is perfect for hungry people on the go.

Zamba Chicken is Real Food Served Fast and with Flair

You have to visit your local Zamba Chicken to get the full experience. The aroma of fine South American barbecue wafts in the air as you enter. An open-air kitchen features columns of savory chickens turning slowly over an open flame. Piped in Latin music and the colorful décor create a vibrant atmosphere. You get to sample a menu that is brimming with a unique blend of flavors that can best be described as “South American Fusion.” It’s an atmosphere that will make you want to come back over and over again.  

Zamba History

Zamba Chicken is the brainchild of John Gennaro, a New Jersey-based entrepreneur who works long hours and, like clockwork, comes home with a craving for a hearty meal. Over the years, he has relied on many local restaurants for late-night meals and was consistently drawn to the delicious tastes and aromas of South American cuisine.

John recalls visiting many small, family-owned restaurants that stayed open late. The meals were delicious, as the recipes were passed down from generation to generation and proudly prepared for him. The best dishes were the slow-roasted chicken and ribs served at the barbecue style restaurants that were simmering in marinated juices and cooked with a delicate blend of spices.

Everyone who patronized the small eateries seemed to enjoy the food, as John saw the same loyal customers at the restaurants over and over again. He did notice that these eateries sometimes had trouble attracting new customers, presumably because many people didn’t know what to expect from a South American restaurant.

A light bulb went off in John’s head. With his mind for business, he recognized an opportunity to bring these delicious dishes to a grander stage.

“The problem with many restaurants today is everybody is looking to make the same thing. It gets boring after a while,” John said. “I saw an opportunity to break that trend and create a menu of my favorite South American dishes, one that I could use to introduce new people to the wonderful flavors of the various cuisines.”

John began pulling together the best of the dishes he experienced into what he can best describe as “South American Fusion.” A unique menu began to form, comprising Brazilian flavors, Peruvian flavors, Columbian flavors, Portuguese flavors and more. From there, Zamba Chicken was born.

When his first store opened in 2007, the response was overwhelming. People were anxious to experience John’s version of South American Fusion, and were amazed by his story of culling together the best recipes from the small, family-owned cafes. John, and his chefs, mastered the art of creating a South American spice blend that accentuated the flavor of the meat, but did not overpower it.

The end result is a meal that people of any age can enjoy. As Zamba Chicken expands and adds more stores, it remains focused on creating fresh, tasty dishes that offer people a break from the usual. Visiting Zamba Chicken is an experience; that’s the hallmark of our restaurants.
